Mummified Brownie Bites

I can’t believe Halloween is in a few days! There is so much that I want to post and so little time!!!

This past weekend my family and I went to our good friends annual Halloween party. Halloween is their absolute favorite holiday, so they do it up every year, and they certainly don’t disappoint! I love myself a good party theme, so I can’t resist whipping up something Halloweeny to bring with us. This year I made Mummified Brownie Bites! With tots underfoot, costumes to put together, and travel to consider, I like to keep things as simple as possible, while still making something fun. These brownie bites worked out perfectly!

For this treat you will need your favorite brownie mix (boxed or homemade), mini baking cups, a mini muffin pan, Wilton Candy eyeballs, and Wilton Candy Melts in “bright white,” or white chocolate chips.

Start by mixing up your brownie mix according to the package directions or recipe. I opted to use boxed brownie mix. My favorite is Betty Crocker Fudge Brownies, we’re not fancy over here. I made brownies from scratch one time and I honestly can’t justify the effort when the boxed ones are just so good, and they even come with a box top for my son’s school. (Anybody else’s kid OBSESSED with collecting box tops???)

Line your mini muffin pan with mini baking cups and fill each cup
with brownie batter until about 3/4 full. My mix made about 32 brownie bites. Bake at 350 until a toothpick comes out clean. These took about 18 minutes, but the time may vary depending on which recipe you use, so keep an eye on them. Allow them to cool COMPLETELY before decorating.

For the topping, pour half of a bag of candy melts into microwave safe bowl, microwave for 1 minute, stir. Continue to microwave for 30 seconds at a time until the consistency is smooth. Transfer the melted candy into a piping bag with a round tip or into a ziplock bag with a small hole cut into one corner. I like to use a small glass to hold my bag while I fill it. I used half of a bag of candy melts for 32 brownie bites.

After the brownie bites have cooled, pipe two dots of the melted candy on them where you want the eyes to go. Immediately place one candy eyeball on each white dot. Pipe the melted candy back and forth across the brownie bite, being careful not to cover the eyes. Allow the topping to harden before traveling.

That’s it! These were so easy to decorate, you could even let your kids help, and the great thing is that they don’t have to be perfect. Mummies aren’t supposed to be perfectly wrapped, so anything goes! This is the first project that I have done with the candy eyeballs and I am already wanting to put eyes on everything now!

Supplies:
Brownie mix-Boxed or your favorite recipe
